Use Stick E Fingers All Purpose rub on pork shoulder
Add the following in a 2-gallon zip lock bag
- 1 can of adobe Chipotle sauce rub on pork shoulder
- 1 quart of orange juice, 2 limes, 1 onion, Bay leaf & Garlic
Let shoulder rest in bag overnight
Remove and sprinkle the following on the shoulder
- Cumin
- Chipotle pepper
- Ancho chili powder
- Cinnamon
- Stick E Fingers BBQ rub
Place on smoker at 225
When internal temp is at 160 wrap in a pan with the following
- Onion
- Garlic, lime
- Yehelio peppers
- Orange juice
- Tomato juice (liquid is just enough to cover pan bottom).
When shoulder reaches 200, pull off smoker & let shoulder rest and then pull
Garnish with avocados, radish, tomatoes, onion, cilantro using corn or flower tortillas.
Mix, mayo, sour cream, chipotle pepper, lime if you desire, makes a great adobo sauce
